Spiced Jackfruit Vegetable Curry

1.Prepare the fresh jackfruit by cutting it into chunks, discarding the core and seeds. Heat vegetable oil in a large pan over medium heat.

2.Add the chopped onion and sauté until translucent. Stir in the minced garlic, grated ginger, and chopped green chili. Cook for a few minutes until fragrant.

3.Sprinkle turmeric, coriander powder, cumin powder, and garam masala over the onion mixture. Stir well to coat the spices evenly.

4.Add the prepared jackfruit chunks to the pan and mix with the spices. Pour in the coconut milk and season with salt and pepper.

5.Cover and simmer for 20-25 minutes until the jackfruit is tender, stirring occasionally. Adjust the seasoning if needed.

6.Garnish with fresh cilantro before serving.

7.Serve the spiced jackfruit vegetable curry hot with steamed rice or naan.
