Savory Chicken and Rice Casserole

Preheat the oven to 375°F (190°C).

In a skillet, heat oil over medium heat. Season the chicken breasts with salt, pepper, and garlic powder (1 teaspoon). Cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, sauté the onion, bell pepper (½ cup), and carrots until softened, about 5-7 minutes.

Add the rice, cream of chicken soup (1 can), chicken broth (1 cup), thyme, salt, and pepper to the skillet. Stir well to combine.

Transfer the rice mixture to a baking dish. Place the cooked chicken breasts on top of the rice.

Cover the baking dish with foil and bake for 30-35 minutes or until the rice is cooked, and the chicken is tender.

Remove the foil and broil for an additional 5 minutes to brown the chicken slightly.

Garnish with fresh parsley before serving.
