Savory Tomato Potato Bake

1.Preheat the oven to 375°F (190°C).

2.Peel and slice the potatoes thinly. Slice the tomatoes and onion as well.

3.In a skillet, heat some olive oil over medium heat. Add the sliced onion and garlic, and cook until softened.

4.Layer half of the sliced potatoes in a baking dish. Top with half of the sliced tomatoes.

5.Sprinkle half of the cooked onion and garlic mixture over the tomatoes.

6.Season with salt, pepper, and half of the dried thyme.

7.Repeat the layers with the remaining potatoes, tomatoes, onion mixture, and seasonings.

8.Cover the baking dish with foil and bake in the preheated oven for 45 minutes.

9.Remove the foil, sprinkle the grated Parmesan cheese over the top, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

10.Garnish with chopped fresh parsley before serving.
