Creamy Leek Soup

Wash the leeks (3) thoroughly to remove any dirt. Trim off the roots and dark green tops, then slice the leeks (3) finely.

In a large pot, melt the butter (2 tablespoons) over medium heat. Add the chopped onion (1) and garlic, and sauté until translucent, about 5 minutes.

Add the sliced leeks (3) to the pot and cook for another 5 minutes, stirring occasionally, until they are soft and fragrant.

Pour in the vegetable broth (4 cups) and add the bay leaf (1) and thyme (½ teaspoon). Bring the mixture to a simmer and cook for 15 minutes, allowing the flavors to develop.

Remove the bay leaf (1) from the pot. Using an immersion blender, blend the soup until smooth and creamy.

Stir in the heavy cream (1 cup) and simmer for an additional 5 minutes. Season with salt and pepper to taste.

Serve the creamy leek soup hot, garnished with a drizzle of cream or a sprinkle of fresh thyme (½ teaspoon) leaves.

Enjoy your comforting bowl of Creamy Leek Soup!
