Spicy Brinjal Gravy Curry

1.Heat oil in a pan over medium heat.

2.Add finely chopped onions and sauté until they turn golden brown.

3.Add ginger garlic paste, green chili, and sauté for a minute until the raw smell disappears.

4.Add sliced brinjal and cook until they are soft and tender, stirring occasionally.

5.Once the brinjal is cooked, add diced tomatoes and cook until they turn mushy.

6.Add turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala powder. Mix well and cook for a few minutes to blend the flavors.

7.Pour in coconut milk and water. Stir and let it simmer for 5-7 minutes until the gravy thickens to the desired consistency.

8.Garnish with fresh coriander leaves and serve hot with rice or bread.
