Decadent Chocolate Mint Cookies

1.Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2.In a bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.

3.In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

4.Add the egg, vanilla extract, and peppermint extract to the butter-sugar mixture, and mix until smooth.

5.Gradually add the dry ingredients to the wet ingredients and mix until a smooth dough forms.

6.Stir in the chocolate chips and chopped mint candies or candy canes until evenly distributed in the dough.

7.Scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheet.

8.Flatten each dough ball slightly with the back of a spoon or your fingers.

9.Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.

10.Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
