Savory Chicken Ramen Noodle Soup

1.In a large pot, heat oil over medium heat.

2.Add chopped onion, garlic, and grated ginger. Saute until fragrant, about 2 minutes.

3.Add chicken breasts to the pot and brown on both sides, about 3-4 minutes per side.

4.Pour in chicken broth, soy sauce, rice vinegar, chili garlic sauce, and sesame oil. Bring to a simmer and cook for 15 minutes, or until chicken is cooked through.

5.Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

6.Add sliced carrots and celery to the pot. Simmer for 5 minutes, or until vegetables are tender.

7.Cook the ramen noodles according to package instructions in a separate pot. Drain and set aside.

8.To serve, place a portion of cooked noodles in each bowl. Ladle the chicken and vegetable mixture over the noodles. Sprinkle with sliced scallions and drizzle with sriracha, if desired.
