Fassona Beef and Truffle Tartare

1Finely chop the fassona beef fillet (300 g) and place it in a mixing bowl.

2Grate the black truffle (1) using a truffle slicer or a fine grater. Add the grated truffle to the bowl with the beef.

3Add the extra virgin olive oil (2 tbsp), finely chopped shallot (1 small), capers (1 tbsp), Dijon mustard (1 tbsp), Worcestershire sauce (1 tbsp), and egg yolk (1) to the bowl with the beef and truffle.

4Gently mix all the ingredients together until well combined. Season with salt and pepper to taste, if desired.

5Divide the tartare mixture into two portions and shape them into neat rounds on serving plates.

6Garnish the tartare with freshly chopped parsley and serve with slices of toasted bread on the side.
