Brazilian Rice and Beans with Chicken

1.In a large skillet, heat olive oil over medium heat.

2.Add the diced chicken and cook until browned, then remove from the skillet and set aside.

3.In the same skillet, sauté the onion, garlic, and bell pepper until softened.

4.Add the diced tomatoes, cumin, paprika, oregano, and chili powder. Stir well to combine all the flavors.

5.Return the browned chicken to the skillet and mix with the vegetables and spices.

6.Pour in the chicken broth and coconut milk. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld together.

7.Add the cooked black beans and rice to the skillet. Stir everything together and let it simmer for another 10 minutes until the rice is fully cooked and the chicken is tender.
