Cheesy Chicken Bacon Casserole

1.Preheat the oven to 375°F (190°C).

2.Cook pasta or rice according to package instructions. Drain and set aside.

3.In a skillet, cook bacon until crispy. Remove from the skillet, chop into small pieces, and set aside.

4.In the same skillet, cook chicken breasts until browned on both sides. Remove from the skillet and shred the chicken.

5.In a mixing bowl, combine shredded chicken, cooked pasta or rice, cottage cheese, sour cream, eggs, and a portion of the shredded cheese. Mix well.

6.Peel and thinly slice the golden potatoes and onion.

7.Grease a baking dish with olive oil. Layer the bottom of the baking dish with sliced potatoes and onions.

8.Spread the chicken and pasta mixture over the potato and onion layer.

9.Top with the remaining shredded cheese and crispy bacon pieces.

10.In a separate bowl, mix Bisquick mix with water according to package instructions to make a batter. Pour the batter evenly over the casserole.

11.Sprinkle the assortment of seasonings over the casserole.

12.Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the casserole is cooked through.
