Syrian Style Beef and Green Bean Stew

1In a large pot, heat some oil over medium heat and brown the beef stew meat (1 lb) until all sides are seared, then remove and set aside.

2In the same pot, sauté the chopped onions until translucent, then add the minced garlic (3 cloves) and cook for another minute.

3Stir in the tomato paste (1 tablespoon) and all the spices (paprika (1 teaspoon), cumin (½ teaspoon), coriander (½ teaspoon), cinnamon (¼ teaspoon), nutmeg (¼ teaspoon), allspice (¼ teaspoon)) and cook for 1-2 minutes to toast the spices, adding a splash of beef broth (3 cups) if needed to deglaze the pan.

4Return the browned beef to the pot, add the green beans, (2 cups) diced tomatoes (1 can), and the rest of the beef broth (3 cups). Bring to a simmer and then reduce the heat to low. Cover and let it simmer gently for about 1 hour or until the beef is tender and the green beans (2 cups) are cooked through.

5Check the seasoning and adjust if necessary. Serve the Syrian Style Beef and Green Bean Stew hot, garnished with fresh parsley.
