Decadent Chocolate Truffles

1In a saucepan, heat the heavy cream (1 cup) and butter over low heat until the mixture starts to simmer, but do not boil.

2Remove the saucepan from heat and add the chocolate chips. Let it sit for a few minutes to allow the chocolate to melt.

3Stir the mixture until the chocolate is completely smooth and well blended with the cream.

4Add vanilla extract (1 tsp) and stir to combine.

5Let the chocolate mixture cool to room temperature, cover it with plastic wrap, and refrigerate for at least 3 hours or until firm.

6Once chilled, use a melon baller or spoon to scoop out small portions of the chocolate mixture and form them into balls with your hands.

7Roll each ball in cocoa powder until evenly coated.

8Place the truffles on a baking sheet lined with parchment paper and refrigerate for 1 hour before serving.
