Decadent Chocolate Truffles

1.In a saucepan, heat the heavy cream and butter over low heat until the mixture starts to simmer, but do not boil.

2.Remove the saucepan from heat and add the chocolate chips. Let it sit for a few minutes to allow the chocolate to melt.

3.Stir the mixture until the chocolate is completely smooth and well blended with the cream.

4.Add vanilla extract and stir to combine.

5.Let the chocolate mixture cool to room temperature, cover it with plastic wrap, and refrigerate for at least 3 hours or until firm.

6.Once chilled, use a melon baller or spoon to scoop out small portions of the chocolate mixture and form them into balls with your hands.

7.Roll each ball in cocoa powder until evenly coated.

8.Place the truffles on a baking sheet lined with parchment paper and refrigerate for 1 hour before serving.
