Homemade Ciabatta Bread

1In a large mixing bowl, combine the bread flour (4 cups), instant yeast (2¼ teaspoons), and sugar (2 teaspoons). Mix well to ensure even distribution of ingredients.

2Gradually add the lukewarm water (2½ cups) to the dry ingredients, stirring with a wooden spoon until a sticky dough forms.

3Cover the bowl with a damp kitchen towel and let the dough rise in a warm place for about 1-2 hours, or until doubled in size.

4Preheat your oven to 450°F (230°C) and place a baking stone or inverted baking sheet inside to heat up.

5Once the dough has doubled in size, gently transfer it onto a heavily floured surface. Carefully shape the dough into a rectangle, preserving as much air as possible.

6Divide the dough into two equal pieces and place them on a parchment-lined baking sheet. Let the dough rise for another 30 minutes while covered with a damp towel.

7Carefully transfer the risen dough onto the preheated baking stone or sheet. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
