Creamy Avocado Pasta

1Cook the pasta according to the package instructions until al dente. Drain and set aside.

2In a blender, combine the flesh of 2 ripe avocados, 1/4 cup of olive oil, and 2 cloves of chopped garlic. Blend until smooth and creamy, adding a splash of water if needed to thin the sauce.

3In a pan, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of halved cherry tomatoes and sauté until slightly softened, about 3-4 minutes. Season with salt and pepper to taste.

4Toss the cooked pasta in the creamy avocado sauce until well coated.

5Serve the avocado pasta in plates, topped with the sautéed cherry tomatoes and a drizzle of garlic-infused olive oil.

6Garnish with fresh basil leaves or grated parmesan cheese, if desired.
