Beetroot Dessert Delight

Peel the large beetroot (1 large) and cut it into small cubes.

Boil the beetroot (1 large) cubes in a pot of water until they are soft and tender, about 15-20 minutes.

Drain the cooked beetroot (1 large) cubes and transfer them to a blender or food processor.

Add sugar (½ cup) to the beetroot (1 large) cubes in the blender.

Blend until you achieve a smooth and creamy consistency, scraping down the sides of the blender as needed.

Taste the mixture and adjust the sweetness by adding more sugar (½ cup) if desired.

Pour the beetroot (1 large) and sugar (½ cup) mixture into serving bowls or glasses.

Chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld together and the dessert to set.

Garnish with a sprinkle of sugar (½ cup) or a mint leaf before serving for an extra touch of sweetness and freshness.
