Monal Special Soup

In a large pot, heat some oil over medium heat. Add the chicken pieces (1 lb) and cook until browned on all sides.

Add the chopped onion (1), minced garlic (3 cloves), and grated ginger (1 inch). Sauté until the onion (1) is soft and translucent.

Stir in the sliced carrots (2), diced celery, corn kernels (1 cup), and peas (1 cup). Cook for a few minutes until the vegetables start to soften.

Pour in the chicken broth (6 cups) and bring the soup to a boil. Reduce the heat and let it simmer for about 15 minutes until the chicken is fully cooked.

Add the turmeric powder (1 tsp), cumin powder (1 tsp), coriander powder (1 tsp), chili powder (½ tsp), black pepper (½ tsp), and salt to taste. Stir well to combine all the spices into the soup.

Simmer the soup for an additional 5 minutes to allow the flavors to blend together.

Finally, add the fresh cilantro (¼ cup) and lemon juice (2 tbsp). Stir well and adjust the seasonings according to your taste preferences.

Serve the Monal Special Soup hot in bowls and enjoy the comforting flavors of this delicious homemade soup.
