Zesty Lemon Chicken Stir-Fry

1.In a bowl, mix the soy sauce, honey, lemon zest, lemon juice, and cornstarch. Set aside.

2.Heat olive oil in a large pan over medium-high heat.

3.Add sliced chicken to the pan and cook until browned on all sides, about 5-7 minutes.

4.Remove the chicken from the pan and set aside.

5.In the same pan, add more olive oil if needed. Add garlic, ginger, and onions. Cook until fragrant, about 2 minutes.

6.Add the sliced bell peppers to the pan and stir-fry for 3-4 minutes.

7.Return the chicken to the pan.

8.Pour in the chicken broth and the soy sauce mixture. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.

9.Garnish with green onions and sesame seeds before serving.

10.Serve the zesty lemon chicken stir-fry hot over rice, noodles, or enjoy it as is!
