Savory Beef Stuffed Bell Peppers

1Preheat the oven to 375°F (190°C).

2Cut the tops off the bell peppers (4 large) and remove the seeds and membranes. Place the peppers in a baking dish.

3In a skillet, cook the ground beef (1 lb) over medium heat until no longer pink. Add the diced onion (1) and garlic (2 cloves), and cook until fragrant.

4Stir in the cooked rice (1 cup), diced tomatoes (1 can), beef broth (1 cup), paprika (1 tsp), cayenne pepper (½ tsp), oregano, and basil. Cook for a few more minutes until heated through.

5Spoon the beef mixture into the hollowed-out bell peppers (4 large), packing it in tightly. Top each pepper with shredded cheese (½ cup).

6Cover the baking dish with aluminum foil and bake for 30 minutes.

7Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly browned.

8Garnish with chopped parsley before serving.
