Hearty Potato and Beef Stew

In a large pot, heat 1 tablespoon of olive oil (2 tablespoons) over medium-high heat.

Add the beef stew meat (1 lb) and cook until browned on all sides. Remove the meat from the pot and set aside.

Add the remaining olive oil (2 tablespoons) to the pot and sauté the onions, carrots (2), and celery until they start to soften, about 5 minutes.

Stir in the garlic (3 cloves) and cook for another minute.

Return the beef to the pot and add the diced potatoes (3).

Pour in the beef broth (4 cups) and diced tomatoes (1 can). Add the dried thyme (1 teaspoon), rosemary, bay leaf (1), salt, and pepper.

Bring the stew to a boil, then reduce the heat to low and simmer for about 1.5 hours, or until the beef is tender and the potatoes (3) are cooked through.

Remove the bay leaf (1) before serving.

Enjoy the comforting and delicious potato and beef stew (1 lb)!
