Spicy Onion Tomato Gravy with Gram Flour Twist

1Heat oil (2 tbsp) in a pan over medium heat.

2Add cumin seeds (1 tsp) and let them splutter.

3Add finely chopped onions (2) and sauté until golden brown.

4Stir in minced garlic (3 cloves) and grated ginger (½ tsp), cook for 1 minute.

5Add chopped tomatoes (2) and cook until soft and mushy, stirring occasionally.

6Sprinkle turmeric powder (1 tsp), coriander powder (1 tsp), garam masala (1 tsp), red chili powder (½ tsp), and paprika (½ tsp). Mix well.

7In a separate bowl, mix gram flour (¼ cup) and semolina, ensuring no lumps.

8Add the gram flour (¼ cup)-semolina mixture to the pan, stirring continuously to avoid clumping.

9Pour in water gradually to achieve desired consistency, stirring constantly to prevent any lumps.

10Simmer the gravy for 10-15 minutes until it thickens and the raw taste of gram flour (¼ cup) disappears, stir occasionally.

11Adjust salt and spices according to taste, and garnish with fresh coriander leaves if desired.

12Serve the spicy onion tomato gravy hot with rice or bread of your choice.
