Spicy Red Curry Chicken

1Heat oil in a pan over medium heat.

2Add minced garlic (3 cloves), grated ginger, and sliced onion (1). Sauté until fragrant, about 2 minutes.

3Add chicken breast (1 lb), thinly sliced, and cook until lightly browned, about 5 minutes.

4Stir in red curry paste (2 tbsp) and cook for an additional 2 minutes to release the flavors.

5Pour in 2 cups of water and let the mixture simmer for 15 minutes or until the chicken is fully cooked and the sauce thickens.

6Serve hot over steamed rice or with naan bread for a delicious meal.
