Birthday Rice

1Rinse the basmati rice (2 cups) until the water runs clear, then soak in water for 30 minutes before cooking.

2In a large pan, heat vegetable oil (2 tablespoons) over medium heat. Add onions, garlic (3 cloves), and ginger (1 teaspoon). Saute until onions are translucent and fragrant, about 2-3 minutes.

3Add in the mixed vegetables (1 cup), bell peppers, and shredded chicken. Cook until the vegetables are slightly tender, about 5 minutes.

4Push the vegetables to the side of the pan and crack the eggs (4) into the empty space. Scramble the eggs (4) until cooked through, then mix them with the vegetables.

5Drain the soaked rice and add it to the pan. Stir well to combine with the vegetable and chicken mixture.

6Season the rice with soy sauce (3 tablespoons), sesame oil (1 teaspoon), curry powder (1 teaspoon), turmeric powder (½ teaspoon), cumin powder (½ teaspoon), and chili flakes (½ teaspoon) if using. Stir to evenly distribute the seasonings and cook for an additional 2-3 minutes.

7Pour water over the rice mixture, cover the pan, and reduce the heat to low. Let the rice simmer for about 15-20 minutes until fully cooked and (½ cup) fluffy.

8Once the rice is cooked, fluff it with a fork and garnish with chopped green onions (¼ cup) and cilantro before serving.
