Birthday Goulash

1In a large Dutch oven, heat the olive oil (2 tablespoons) over medium-high heat.

2Add the beef cubes and cook until browned on all sides. Remove and set aside.

3In the same pot, add the onions (2) and cook until translucent. Add the garlic (4 cloves) and cook for another minute.

4Stir in the paprika (2 tablespoons) and caraway seeds (1 teaspoon), cooking for a minute to release their flavors.

5Add the red bell peppers (2), diced tomatoes, beef broth (4 cups), red wine (1 cup), bay leaves (2), Worcestershire sauce (1 tablespoon), and season with salt and pepper.

6Return the beef to the pot and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 1.5 to 2 hours, stirring occasionally, until the beef is tender and the sauce is thickened.

7Serve the goulash over cooked egg noodles or rice, garnish with chopped parsley, and enjoy!
