Creamy Pasta Sauce with Bacon and Sweetcorn

1Cook the pasta according to the package instructions until al dente.

2In a large skillet, cook the bacon strips (200 g) over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the pan.

3Add the sweetcorn (1 cup) to the skillet and sauté for 3-4 minutes until they start to caramelize.

4Pour in the heavy cream (2 cups) and stir well, allowing it to simmer for 5 minutes to thicken slightly.

5Stir in the grated Parmesan cheese (½ cup) until it melts and blends into the sauce.

6Crumble the cooked bacon and add it back to the skillet, stirring to combine with the sauce.

7Drain the cooked pasta and add it to the skillet, tossing well to coat the pasta evenly with the creamy sauce.

8Serve the creamy pasta sauce with bacon and sweetcorn (1 cup) hot, garnished with extra Parmesan cheese and a sprinkle of black pepper if desired.
