Crunchy Sugar Bird's Nest

1.Prepare a baking sheet lined with parchment paper.

2.In a saucepan, combine the granulated sugar, water, and cream of tartar over low heat, stirring until the sugar dissolves.

3.Increase the heat to medium-high and boil the mixture, without stirring, until it reaches 300°F (150°C) on a candy thermometer (hard crack stage).

4.Remove the saucepan from heat and let it cool for about 2 minutes to thicken slightly.

5.Using a fork or spoon, drizzle the sugar mixture in a circular motion on the parchment paper to create nest-like shapes. Work quickly before the sugar hardens.

6.Allow the nests to cool and harden completely at room temperature for about 15-20 minutes.

7.Carefully peel the sugar nests off the parchment paper and serve as a standalone treat or use as a decorative element for desserts.
