New Year's Moqueca

1In a large pot, heat olive oil (2 tbsp) over medium heat. Add the onions and garlic (3 cloves), and sauté until fragrant, about 2 minutes.

2Add the sliced bell peppers and cook for another 3-4 minutes until slightly softened.

3Stir in the paprika (1 tbsp), cumin (1 tbsp), coriander (1 tbsp), and red pepper flakes (1 tbsp). Cook for another minute to toast the spices.

4Add the diced tomatoes with their juices and bring to a simmer.

5Pour in the coconut milk and stir well to combine all the ingredients.

6Season the fish fillets and shrimp with salt and pepper, then add them to the pot. Gently stir to coat the seafood with the sauce.

7Cover and simmer for about 15-20 minutes, or until the fish is cooked through and the shrimp are pink and opaque.

8Taste and adjust seasoning with salt and pepper if needed.

9Serve hot, garnished with chopped cilantro and accompanied by lime wedges for squeezing over the stew.
