Birthday Samosa

1In a mixing bowl, combine the all-purpose flour (2 cups), turmeric powder (¼ teaspoon), cumin seeds (½ teaspoon), vegetable oil (4 tablespoons), and water (½ cup) to make a smooth dough. Cover and let it rest for 15-20 minutes.

2Meanwhile, prepare the filling by heating vegetable oil (2 tablespoons) in a pan. Add chopped onions and sauté until golden brown.

3Add the mashed potatoes, boiled (2 large) green peas, (½ cup) cumin powder (1 teaspoon), coriander powder (1 teaspoon), garam masala (½ teaspoon), red chili powder (½ teaspoon), and salt. Mix well and cook for 5-7 minutes. Remove from heat and let it cool.

4Divide the dough into small balls and roll each ball into a thin circle.

5Cut the circle in half to form two semi-circles.

6Take a semi-circle, brush water (½ cup) on the straight edge, and fold it to form a cone, sealing the edge.

7Fill the cone with the potato and pea mixture and seal the open edge by pressing it firmly.

8Heat vegetable oil (4 tablespoons) in a deep frying pan. Fry the samosas in batches on medium heat until golden brown and crispy, turning occasionally.

9Serve the birthday samosas hot with mint chutney or tamarind sauce for a delicious celebration!
