Mixed Flour Fritters with Spiced Potato and Onion Filling

1In a mixing bowl, combine wheat flour (2 cups), besan, and pulses (1 cup). Add water gradually to form a thick batter.

2In a separate bowl, mix mashed potatoes (2), chopped onions, soaked sabudana, curry leaves, and basic masala spices. Season with salt to taste.

3Heat oil in a deep frying pan over medium heat.

4Take a spoonful of the mixed flour batter and flatten it. Place a portion of the potato-onion (1) filling in the center and fold the batter around it to form a ball. Repeat with the remaining batter and filling.

5Carefully place the fritters in the hot oil and fry until golden brown and crispy, turning occasionally to ensure even cooking.

6Once cooked, remove the fritters from the oil and place them on a paper towel to drain excess oil.

7Serve the mixed flour fritters with spiced potato and onion (1) filling hot with your favorite chutney or sauce.
