Creamy Garlic Noodle Stir-Fry

1.Cook the rice noodles according to package instructions. Drain and set aside.

2.In a large skillet, heat oil over medium heat. Add the minced garlic and sliced onions. Cook until onions are translucent, about 3-4 minutes.

3.Push the garlic and onions to one side of the skillet. Crack the eggs into the empty side of the skillet and scramble until cooked through.

4.Mix the eggs with the garlic and onions. Add the cooked rice noodles to the skillet.

5.In a small bowl, combine mayonnaise and milk. Pour the mixture over the noodles and stir to coat evenly. Cook for 2-3 minutes.

6.Add the assorted veggies to the skillet and continue to cook, stirring occasionally, until the veggies are tender but still crisp, about 5 minutes.

7.Season with salt and pepper to taste. Serve hot and enjoy!
