Spicy Dabeli Delight

1Prepare the Potato Filling: Heat oil (1 tablespoon) in a pan and add mustard seeds (1 teaspoon) and cumin seeds (1 teaspoon). Once they splutter, add turmeric powder (½ teaspoon) and red chili powder (1 teaspoon). Add the mashed potatoes (3 medium), tamarind-date chutney (1 tablespoon), and salt. Cook for 2-3 minutes and set aside.

2Make the Dabeli Masala: Dry roast the desiccated coconut (2 tablespoons), sesame seeds (1 tablespoon), cinnamon, cloves (2-3), dried red chilies (2-3), coriander seeds (1 tablespoon), and fennel seeds (1 tablespoon). Grind to a fine powder and set aside.

3Prepare the Dabeli Stuffing: Heat oil (1 tablespoon) in a pan and sauté the chopped onions until golden brown. Add the potato filling, roasted peanuts (¼ cup), pomegranate seeds (¼ cup), and Dabeli masala. Mix well and cook for 2-3 minutes.

4Assemble the Dabeli: Slit the Dabeli buns (6) horizontally. Apply butter (2 tablespoons), garlic chutney, and tamarind-date chutney (1 tablespoon) on both sides. Stuff the buns with the prepared stuffing and top with nylon sev, coriander leaves, and pomegranate seeds (¼ cup).

5Toast the assembled Dabeli on a hot tawa (griddle) until crisp and golden brown.

6Serve hot with extra nylon sev, chutneys, and garnish with coriander leaves and pomegranate seeds (¼ cup).
