Christmas Kaldereta

1In a large bowl, combine the beef (2 lbs), vinegar (¼ cup), and soy sauce (½ cup). Marinate for at least 1 hour, or overnight for best results.

2In a large pot, heat oil over medium heat. Sauté garlic (4 cloves) and onions until fragrant.

3Add the marinated beef (2 lbs) and cook until browned on all sides.

4Pour in the tomato sauce (1 cup) and beef broth (1 cup). Add the bay leaf (1), paprika (1 tsp), chili powder (1 tsp), and bring to a simmer. Cover and cook for 1 hour or until the beef (2 lbs) is tender, stirring occasionally.

5Add the potatoes (3), carrots (2), and bell peppers. Simmer until the vegetables are tender, about 15-20 minutes.

6Stir in the green peas (½ cup) and cook for an additional 5 minutes.

7Season with salt and pepper to taste, then serve hot with steamed rice or bread.
