Christmas Puto

1.In a bowl, combine rice flour, sugar, and baking powder. Mix well to ensure even distribution of ingredients.

2.Gradually add coconut milk while stirring to form a smooth batter.

3.Add water and mix until the batter reaches a slightly thick consistency.

4.Blend in the butter until well incorporated into the batter.

5.If desired, fold in raisins and shredded coconut for added flavor and texture.

6.Prepare your steamer by boiling water and lining the steamer trays with banana leaves for a traditional touch.

7.Fill each puto mold or cupcake liner with the batter until 3/4 full, leaving room for the cakes to rise during steaming.

8.Place the filled molds into the steamer and steam for about 20-25 minutes until the puto is cooked through and firm to the touch.

9.Once cooked, sprinkle grated cheese on top of each puto while they are still hot to allow the cheese to melt and adhere to the surface.
