Easter Menudo

1.In a large pot, combine beef tripe, pork shoulder, onion, garlic, tomatoes, tomato sauce, chickpeas, green peas, carrots, potato, bell pepper, jalapeno pepper (if using), raisins, green olives, cumin powder, paprika, chili powder, vinegar, soy sauce, and beef broth.

2.Bring the mixture to a boil, then reduce heat to low and simmer for about 1.5 to 2 hours, stirring occasionally, until the meats are tender and the flavors are well blended.

3.Season with salt and pepper to taste.

4.Serve the Easter menudo hot over cooked rice.

5.Garnish with lime wedges and cilantro before serving.
