Birthday Potato Croquettes

1Peel and boil the potatoes (2 lbs) in a large pot of salted water until tender, about 15-20 minutes.

2Drain the potatoes (2 lbs) and mash them in a bowl until smooth and lump-free.

3Add the breadcrumbs (½ cup), Parmesan cheese, eggs (2), parsley, onion, garlic powder (½ tsp), paprika (½ tsp), salt, and pepper to the mashed potatoes (2 lbs). Mix well to combine all the ingredients thoroughly.

4Shape the potato mixture into small croquettes or patties and place them on a baking sheet.

5In a shallow bowl, add the flour (¼ cup). Dredge each croquette in flour (¼ cup), ensuring it's coated evenly on all sides.

6Heat oil in a deep pan over medium heat for frying.

7Carefully place the coated croquettes in the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.

8Remove the croquettes from the oil using a slotted spoon and place them on a paper towel to drain excess oil.

9Serve the birthday potato croquettes hot, garnished with additional parsley or grated Parmesan cheese (¼ cup) if desired.
