Christmas Gardiniera

1.In a large pot, combine the cauliflower florets, sliced carrots, red bell peppers, green bell peppers, green olives, black olives, pearl onions, cocktail onions, jalapeno slices, and capers.

2.In a separate saucepan, mix together the white vinegar, water, sugar, mustard seeds, celery seeds, and red pepper flakes. Bring the mixture to a boil and simmer for 5 minutes.

3.Pour the hot vinegar mixture over the vegetables in the large pot.

4.Stir gently to ensure all the vegetables are coated in the vinegar mixture. Let the mixture cool to room temperature.

5.Transfer the vegetable mixture and vinegar brine to sterilized jars, making sure the vegetables are completely covered by the liquid.

6.Seal the jars tightly and store in a cool, dark place for at least 1 week before serving to allow the flavors to develop fully.
