Tuna Potato Croquettes

1Peel and cut the potatoes (4 large) into chunks, then boil them until tender. Drain and mash them in a large bowl.

2In a separate pan, sauté the chopped onion (1) and minced garlic (2 cloves) until soft and translucent. Add the tuna (2 cans) to the pan and cook for a few minutes until heated through.

3Combine the mashed potatoes (4 large), tuna (2 cans) mixture, breadcrumbs (½ cup), parsley, and Parmesan cheese in a bowl. Season with salt and pepper to taste.

4Shape the mixture into croquettes, then dip each croquette into flour (½ cup), followed by beaten eggs (2), and finally breadcrumbs (½ cup).

5Heat oil in a pan over medium heat. Fry the croquettes until crispy and golden brown on all sides, about 3-4 minutes per side.

6Serve the tuna (2 cans) potato croquettes hot with your favorite dipping sauce and enjoy!
