Christmas Codfish Balls

1Start by desalting the codfish. Rinse the codfish under cold water and soak it in a bowl of cold water overnight. Change the water a few times to remove excess salt.

2Boil the potatoes (2 large) until tender. Drain and mash them in a bowl.

3Finely chop the onion (1), garlic (2 cloves), and parsley. Add them to the mashed potatoes (2 large).

4Once the codfish is desalted, shred it into small pieces and add it to the potato mixture.

5Beat the eggs (2) and add them to the mixture. Mix well to combine all the ingredients thoroughly.

6In a separate bowl, combine the flour and baking powder (½ tsp). Gradually add this dry mixture to the codfish and potato mixture, stirring until a smooth batter forms.

7Heat vegetable oil in a deep frying pan over medium heat.

8Shape the mixture into small balls using your hands.

9Carefully drop the codfish balls into the hot oil and fry until golden brown and crispy on all sides, about 3-4 minutes per batch.

10Remove the codfish balls from the oil and place them on paper towels to drain excess oil. Serve hot and enjoy the crispy and flavorful Christmas Codfish Balls!
