Spicy Stuffed Tinde

1Wash the tinde thoroughly and slit them vertically, keeping them intact at the base.

2Heat oil (2 tablespoons) in a pan and add the chopped onions. Saute until the onions turn translucent.

3Add the green chilies (2-3) and ginger-garlic paste (1 tablespoon). Cook for a few minutes until the raw smell disappears.

4Mix in the tomatoes and cook until they turn soft and mushy.

5Add turmeric powder (½ teaspoon), red chili powder (1 teaspoon), coriander powder (1 teaspoon), cumin powder (½ teaspoon), and salt. Stir well to combine all the spices.

6Let the masala cook for a few minutes until the oil (2 tablespoons) starts to separate from the mixture.

7Stuff the prepared masala into the slits of the tinde evenly.

8In the same pan, add a little more oil (2 tablespoons) if needed and gently place the stuffed tinde. Cover and cook on low heat for about 10-15 minutes, turning occasionally until the tinde are tender and cooked through.

9Sprinkle garam masala (½ teaspoon) and chopped coriander leaves (½ cup) on top of the cooked tinde.

10Serve hot with roti or rice. Enjoy your spicy stuffed tinde!
