Tuna and Potato Christmas Croquettes

1.Peel and boil the potatoes until they are tender. Drain and mash them in a large bowl.

2.In a skillet, heat some oil and sauté the finely chopped onion and minced garlic until they are soft and translucent.

3.Add the tuna to the skillet and cook for a few minutes until heated through.

4.Combine the mashed potatoes, tuna mixture, breadcrumbs, Parmesan cheese, parsley, paprika, cayenne pepper, salt, and pepper in the bowl. Mix well to combine all the ingredients thoroughly.

5.Shape the mixture into small croquettes, about the size of mini sausages.

6.Beat the eggs in a shallow bowl. Dip each croquette into the beaten eggs, then roll them in breadcrumbs until fully coated.

7.Heat vegetable oil in a deep pan over medium heat. Fry the croquettes in batches until they are golden brown and crispy on the outside.

8.Remove the croquettes from the oil and place them on a paper towel-lined plate to drain excess oil.

9.Serve the tuna and potato Christmas croquettes hot with your favorite dipping sauce or as a festive holiday appetizer!
