Citrus Glazed Pork Tenderloin

1Preheat the oven to 375°F (190°C).

2Zest and juice one orange and set aside. Slice the other orange into thin rounds and reserve for later.

3In a bowl, mix the orange zest, orange juice, honey (¼ cup), minced garlic (3 cloves), soy sauce (1 tablespoon), olive oil (1 tablespoon), dried thyme (1 teaspoon), paprika (1 teaspoon), salt, and pepper to create the marinade.

4Place the pork tenderloin (1) in a shallow dish and pour half of the marinade over it. Reserve the remaining marinade for basting during cooking.

5Marinate the pork for at least 30 minutes, turning occasionally to ensure even coating.

6Heat a skillet over medium-high heat and sear the pork tenderloin (1) on all sides until browned, about 2-3 minutes per side.

7Transfer the pork to a roasting pan and arrange the orange slices on top of the pork.

8Brush the remaining marinade over the pork and oranges (2).

9Roast in the preheated oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C). Baste the pork with the juices halfway through cooking.

10Remove from the oven and let the pork rest for 5 minutes before slicing.

11Serve the citrus-glazed pork tenderloin (1) hot with the roasted orange slices on top. Enjoy!
