Birthday Cookie Truffles

1In a food processor, crush the Oreo cookies (12) into fine crumbs.

2Add cream cheese (4 oz) to the crushed cookies and blend until well combined.

3Roll the cookie mixture into 12 evenly sized balls and place them on a baking sheet lined with parchment paper.

4Chill the cookie balls in the refrigerator for 15-20 minutes to firm up.

5In a microwave-safe bowl, melt the white chocolate chips (8 oz) in 30-second intervals until smooth, stirring between each interval.

6Using a fork or toothpicks, dip each chilled cookie ball into the melted white chocolate (8 oz), tapping off the excess.

7Place the chocolate-coated truffles back on the parchment paper and immediately sprinkle with colorful sprinkles (½ cup) and rainbow nonpareils (¼ cup) while the chocolate is still wet.

8Chill the truffles in the refrigerator for another 10-15 minutes to set the chocolate coating.
