Spicy Egg Curry with Onions

1Boil the eggs (4) until hard-boiled, about 10 minutes. Peel and set aside.

2In a pan, heat some oil. Add finely chopped onions and sauté until golden brown.

3Add chopped green chillies (2) and curry leaves (8-10) to the pan. Cook until fragrant, around 2 minutes.

4Slice the boiled eggs (4) and add them to the pan. Mix gently to coat the eggs (4) with the onion (1 large), chilli, and curry leaf mixture.

5Season with salt and pepper to taste, and cook for another 5 minutes to allow the flavors to meld together.

6Serve hot with steamed rice or roti. Enjoy the spicy egg curry with the goodness of onions!
