Homemade Sushi Rolls

1Rinse the sushi rice (2 cups) under cold water (4 cups) until the water (4 cups) runs clear. Drain well.

2In a medium saucepan, combine the rice and water (4 cups). Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let stand for 10 minutes.

3In a small saucepan, combine the rice vinegar (½ cup), sugar (¼ cup), and salt (1 tablespoon). Heat over low heat until the sugar (¼ cup) and salt (1 tablespoon) dissolve.

4Transfer the cooked rice to a large bowl and fold in the vinegar mixture. Let the rice cool to room temperature.

5Place a sheet of nori on a bamboo sushi mat. With wet hands, spread a thin layer of rice over the nori, leaving a 1-inch border at the top.

6Arrange your desired fillings in a line across the center of the rice.

7Roll the sushi tightly using the bamboo mat, moisten the top border of the nori with water (4 cups) to seal the roll.

8Slice the sushi roll into bite-sized pieces using a sharp knife.

9Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
