New Year's Vegetable Curry

1Heat vegetable oil (2 tbsp) in a large pot over medium heat. Add cumin seeds (1 tsp) and let them sizzle for a few seconds.

2Add sliced onions, minced garlic, and grated ginger. Saute until the onions are translucent and aromatic, about 3-4 minutes.

3Stir in coriander powder (1 tsp), turmeric powder (½ tsp), garam masala (½ tsp), and red chili powder (¼ tsp). Cook for another minute to toast the spices.

4Add diced carrots (1 cup), bell peppers, potatoes, cauliflower, green beans, and tomatoes. Mix well to coat the vegetables with the spices.

5Pour in the vegetable broth (2 cups) and bring the curry to a simmer. Cover the pot and let it cook for about 15-20 minutes until the vegetables are tender, stirring occasionally.

6Stir in coconut milk (½ cup) and simmer for an additional 5 minutes to blend the flavors. Season with salt to taste.
