Creamy Milk Rabza Delight

1In a heavy-bottomed pan, heat 3 cups of whole milk (3 cups) over medium heat until it comes to a gentle boil.

2Stir in 1/2 cup of sugar (½ cup) and continue to simmer over low heat.

3In a small bowl, mix 1/4 cup of rice flour (¼ cup) with a splash of milk to create a smooth paste.

4Gradually add the rice flour (¼ cup) paste to the simmering milk while stirring continuously to avoid lumps.

5Cook the mixture until it thickens to a custard-like consistency, stirring frequently to prevent sticking to the bottom of the pan.

6Add 1/4 cup each of almonds, pistachios, cashews, and raisins (¼ cup) to the thickened milk mixture.

7Sprinkle in 1/4 teaspoon of cardamom powder (¼ teaspoon) for a fragrant flavor and stir well.

8Gently crush 1/4 teaspoon of saffron strands (¼ teaspoon) between your fingers and add them to the mixture for a lovely color and aroma.

9Simmer for an additional 5-10 minutes to allow the flavors to meld together, stirring occasionally.

10Once the Milk Rabza reaches a creamy consistency, remove from heat and let it cool slightly before serving.

11Serve warm or chilled, garnished with additional nuts or a sprinkle of saffron strands (¼ teaspoon).
