Easter Kare Kare

1.In a large pot, combine oxtail, tripe, onion, garlic, and annatto seeds. Add beef broth and bring to a boil. Simmer for 2-3 hours or until the meat is tender, skimming off any scum that rises to the surface.

2.Remove the meats from the pot and strain the broth. Return the broth to the pot and add peanut butter. Stir well to combine and simmer for another 15 minutes.

3.In a separate pan, sauté shrimp paste until aromatic. Set aside for serving.

4.Add eggplant, string beans, banana heart, and baby bok choy to the pot. Cook until the vegetables are tender, about 10-15 minutes.

5.Return the cooked meats to the pot. Season with fish sauce, sugar, and ground black pepper. Simmer for another 5 minutes.

6.Serve the Kare Kare hot with sautéed shrimp paste on the side. Enjoy this delectable dish with steamed rice or bagoong (fermented shrimp paste) for a truly authentic Filipino experience.
