Caponata Festa di San Giuseppe

1.Heat olive oil in a large pot over medium heat. Add the diced eggplants and cook until slightly browned, about 7-8 minutes.

2.Add the chopped onion, celery, red bell pepper, and yellow bell pepper to the pot. Cook until the vegetables are softened, about 5-6 minutes.

3.Stir in the olives, capers, pine nuts, and raisins. Cook for another 2-3 minutes, allowing the flavors to blend together.

4.Pour in the chopped tomatoes, red wine vinegar, and sugar. Mix well and bring to a simmer. Allow the mixture to cook for 20-25 minutes, stirring occasionally.

5.Season with salt and pepper to taste. Adjust the sweetness or acidity by adding more sugar or vinegar if desired.

6.Remove the pot from heat and let the Caponata cool to room temperature. Stir in the fresh parsley and basil before serving.
