Caponata Festa di San Giuseppe

1Heat olive oil in a large pot over medium heat. Add the diced eggplants (2 large) and cook until slightly browned, about 7-8 minutes.

2Add the chopped onion (1), celery, red bell pepper, (1) and yellow bell pepper (1) to the pot. Cook until the vegetables are softened, about 5-6 minutes.

3Stir in the olives, capers (¼ cup), pine nuts (¼ cup), and raisins (½ cup). Cook for another 2-3 minutes, allowing the flavors to blend together.

4Pour in the chopped tomatoes, red wine vinegar (¼ cup), and sugar (¼ cup). Mix well and bring to a simmer. Allow the mixture to cook for 20-25 minutes, stirring occasionally.

5Season with salt and pepper to taste. Adjust the sweetness or acidity by adding more sugar (¼ cup) or vinegar if desired.

6Remove the pot from heat and let the Caponata cool to room temperature. Stir in the fresh parsley and basil before serving.

7Caponata Festa di San Giuseppe can be enjoyed warm or cold. Serve as a side dish or with crusty bread for a delicious meal.
