St. Joseph's Day Cake

1Preheat the oven to 350°F (180°C) and grease and flour a 9-inch round cake pan.

2In a mixing bowl, whisk together flour and baking powder (1 tablespoon). In a separate bowl, beat eggs (4) and sugar until light and fluffy. Gradually add milk (½ cup), melted butter, and vanilla extract (1 teaspoon).

3Fold the flour mixture into the egg mixture until just combined. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow the cake to cool completely.

4For the custard filling, heat the milk (½ cup) in a saucepan until hot but not boiling. In a bowl, whisk together sugar, egg yolks (4), and cornstarch (¼ cup) until smooth. Slowly pour the hot milk (½ cup) into the egg mixture while whisking continuously.

5Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard consistency. Remove from heat and stir in vanilla extract (1 teaspoon). Let the custard cool completely.

6Once the cake and custard are cooled, carefully slice the cake horizontally into two layers. Spread the custard filling on the bottom layer and place the top layer back on top.

7Toast the sliced almonds (½ cup) in a dry pan until golden brown. Sprinkle the toasted almonds over the cake and dust with powdered sugar before serving.
