Eid Korma

1.In a large pan, heat ghee and add thinly sliced onions. Cook until golden brown, then remove half and set aside for garnishing.

2.To the remaining onions in the pan, add ginger paste, garlic paste, and almond and cashew paste. Cook for a few minutes until the paste changes color slightly.

3.Add the lamb pieces and brown them on all sides. Stir in yogurt, turmeric powder, red chili powder, coriander powder, garam masala, and cardamom. Mix well and cook for 5 minutes.

4.Pour in enough water to cover the meat. Cover and simmer until the meat is tender, stirring occasionally. This may take about 60-75 minutes.

5.Once the meat is cooked, add saffron milk, fried onions, chopped cilantro, and mint leaves. Cook for a few more minutes to let the flavors blend well.

6.Garnish with the reserved fried onions and serve hot with naan or rice.
