Mediterranean Grain Salad with Cherries and Feta

1Cook farro (1 cup) according to package instructions in a pot with water. Set aside.

2In a separate pot, cook white rice (1 cup) with double the amount of water until tender. Fluff with a fork and let it cool.

3In a small bowl, soak the dried cherries (½ cup) in warm water for 10 minutes to plump them up, then drain and set aside.

4Heat some oil in a pan over medium heat. Add the onion (1) and garlic (3 cloves), sauté until translucent and fragrant.

5Add the garbanzo beans, (1 can) red lentils (½ cup), and wild rice (1 cup) to the pan. Stir well to combine and cook for a few minutes.

6Season the mixture with salt and pepper to taste. Add water and simmer until the grains and lentils are cooked through.

7In a large mixing bowl, combine the cooked farro (1 cup), white rice (1 cup), garbanzo bean mixture, and dried cherries (½ cup).

8Gently fold in the crumbled feta cheese (½ cup).

9Serve the Mediterranean grain salad at room temperature or chilled. Enjoy!
